Recipe for Fresh Strawberry Glazed Pie
Pie crust 2 cups flour 1 Teaspoon salt 2 Tablespoons soft butter 2/3 cup shortening 4 Tablespoons ice water
Preparation: cut butter and shortening into flour and salt mixture until fine. Stir in water, one tablespoon at a time, unti ball begins to form. Press together firmly in wax paper. Divide and roll out pie dough. Place rolled dough into each pie shell. Flute edges and poke bottom several places with fork. Bake 12 to 15 minutes at 375 degrees. Set aside to cool for filling. Strawberry filling ingredients 1 1/2 quarts (3 pints) fresh strawberries, washed and hulled 2/3 cup granulated sugar 3 Tablespoons corn starch Water Dash cinnamon
Preparation Take one pint of strawberries and crush well. Pour into 2 cup liquid measuring cup. Add water if needed to bring to 2 cups. In two quart sauce pan, mix sugar and cornstarch. Add in crushed strawberries. Bring to boil, stirring constantly until thickened like pudding. Add dash of cinnamon. Set aside to cool.
Cut remaining strawberries into halves. Set half aside for garnishing top. Fold other half into cooled strawberry glaze mixture and pour into pie shell. Arrange remaining strawberries on top in patterned rows or circles as you desire. Refrigerate for 2 hours before serving. Serve with whipped cream if desired.
This is my husband's favorite recipe from my mother. Instead of a birthday cake, he prefers a fresh strawberry pie. Strawberries are rich in vitamin C and are a source of dietary fiber.
